Coconut Flour N'Oatmeal

Some mornings, you just want a warm bowl of goodness that reminds you of childhood. Or, we just need something quick and easy to throw together on a busy day! Enter this Coconut Flour N’Oatmeal. Easy to customize, quick to make, low-carb, grain-free, sugar-free, and super tasty!

Here's how you make it:

Coconut Flour N’Oatmeal

Ingredients

• 3 Tbsp coconut flour

• 1 Tbsp golden flax meal

• 1 cup filtered water

• 1 large egg, beaten (can omit if eggs are an issue)

• 1 pinch of salt

• Optional (but recommended!) add-ins: grass-fed butter or ghee, coconut milk, nut butter, collagen powder, vanilla, cinnamon, cardamom, and only if you absolutely need it, a touch of maple syrup or raw honey

• Topping ideas: shredded coconut, fruit of choice (apples and berries are great!), nuts or seeds, cocoa nibs

Directions

Combine and mix coconut flour, flax, water and salt in a pot over medium heat.

Whisk occasionally until it starts to simmer.

Remove from heat to add the beaten egg. Mix well and place back on heat until thick and starting to bubble.

Remove from heat and add any desired add-ins.

Transfer to a bowl and add your toppings.
